what are first-grade kernels?
Starting with new season, Australian grown apricot stones as our base, the kernels are hand-sorted to a high standard. We remove the broken and damaged ones, as well as pieces of shell and overly wrinkled kernels, as this indicates a low oil content. An exacting and time consuming process we remove as much as is practicable. The end result is our first-grade kernels.
Correctly dried and sorted seed will present with a mildly wrinkled appearance. Apricot kernels that have been dried too quickly or removed from their shell too early are often over smooth, with a powdery-looking skin. Apricot kernels should be sun dried naturally, within the protection of their shells, in order to avoid oxidization and to preserve maximum nutrient potential.
